With this cool fall weather and soon to be winter weather, I am craving soup. I just want something warm, nourishing and tasty to fill me up.
Soup is so good for a number of different reasons. It’s typically cheap to make, its delicious and so good for you. Yes! I’ll take all the soup.

This creamy tortellini soup is indulgent by my book. My husband who isn’t a big soup fan loves it. I’ll definitely be making it when I want something to switch things up.
This soup is made with, cheese tortellini (you can get it here, https://amzn.to/2My88r8) Italian sausage, spinach, and carrots all in a creamy base, made with heavy cream and chicken broth.
Creamy Tortellini Soup
Delicious creamy base with Italian sausage and cheese filled tortellini.
- 1 lb Italian sausage
- 2 tbsp Garlic (fresh minced)
- 5 Cups Spinach
- 2 24 oz Chicken broth
- 2 Carrots
- 1 12 oz Can diced tomatoes
- 2 Cups Heavy whipping cream
- 1 1 lb Cheese Tortellini
- 2 tbsp Flour
In a large pot, cook sausage. Add the garlic and chopped carrots. Saute for 5 minutes.
Add the flour and chicken broth. Cook for 10 minutes.
Add the 2 cups of cream, the can of tomatoes and tortellini. Let simmer 20 minutes. Add salt and pepper to taste.
(Optional) Before simmering for 20 minutes, transfer to a crock-pot. Cook on low for up to 3 hours.
